
Chana/Chickpea Masala or Chole Masala is basically a North Indian Curry, which is prepared by using basic masalas like chili powder,coriander powder and Curry powder.The base of the recipe is Onion and tomato paste.This is the simple Curry and can be served with chapathi,poori and Pulao.

Ingredients
White Chana-1 Cup
Onion-1 large Sliced
Tomato-3 large Sliced
Chili Powder-1 tsp
Corainder Powder-2 tsp
Curry Powder/Garam Masala-1 tsp
Turmeric Powder-1/4 tsp
Ginger Garlic Paste-1 tsp
Bay Leaf-1
Cardamom Pods-2
Mango Powder-1 tsp(optional)
Kasuri methi-1 tsp(optional)
kashmiri Chili powder-1 tsp
Salt as needed
Oil-3 tsp
Coriander leaves-2 tbsp chopped finely
Pre preparation
1.Soak Chana in Water For 8 to 12 hrs.

Step by Step Photo Recipe
1.Heat a pan or kadai and add 2 tbsp oil.

2.Add Onions.

3.Add Tomatoes.

4.Now Add Ginger garlic paste.

5.Cook till it becomes soft and mushy.

6.Once ready transfer it to a blender.

7.Add soaked Chana into pressure cooker.

8.Add water and Salt.

9.Pressure cook till it becomes soft and mushy(i cooked for 5 whistles)

10.Once ready add 1/4 Cup cooked Chana into blender.

11.Cool and blend into smooth fine paste.
12.In same kadai/pan add 1 tbsp Oil.

13.Add Bay leaf and Cardamom pods.

14.Saute for 2 secs and add Blended paste.

15.Now add 1 to 2 Cups Cooked left over chana water.
16.Now add Chili powder,Coriander powder and Curry Powder.(if you are using mango powder add at this stage)

17.Then add Turmeric Powder at this stage and cook for 1 min.

18.Add Cooked Chana and required salt.

19.Cook till the curry becomes thick.

20.Finally garnish with Coriander leaves and serve with hot Chapathi,Poori or Chola Poori.

Notes
1.Add More or less chili powder.
2.Add kasmiri chili powder for color if needed.
