
Kuzhi Paniyaram/Kara Paniyaram is one of the most famous recipe in southern parts of India.Kara Paniyaram can be served as breakfast or for Evening Snack.Paniyaram is served with Sambar and Chutney or can be eaten as alone.Paniyaram can be prepared in three version as Kara Paniyaram,Karupatti(Sweet) Paniyaram and as Egg Paniyaram.
In this post i have shared the recipe of kara paniyaram with step by step photos.The batter used for the paniyaram is Same batter which is used for making idly and dosa.The batter used for preparing paniyaram should be completely fermented,so that paniyaram turns out crispy and tasty.

Batter Preparation
soak 1 Cup of idly rice and 1/4 cup of Urad dal with 1/4 tsp methi seeds in water for about 3 hrs.The quantity can be doubled if needed.If the quantity is doubled soak the urad dal and methi seeds separately and Rice separately.
After 3hrs add the soaked urad dal and idly rice in a blender and grind into a thick paste by adding water.Once ready transfer into a bowl and add salt.Allow it to ferment.
Batter Consistency
Batter should be little thick(like idli batter)..so that while adding the onion mixture the Consistency will be perfect for preparing paniyaram.
kara Paniyaram version
For Kara paniyaram recipe small onions/Onions,green Chilies,Curry leaves and Coriander leaves are roasted in oil for 1 min and then added to the batter.Mix with the batter and allow it for 15 mins.Now the batter is ready to make soft soft paniyaram.
Egg Version
For Egg version Same paniyaram batter is used.Take a desired quantity of batter in a bowl add 1 or 2 eggs,add salt and mix completely.Now the batter for egg paniyaram is ready.

Ingredients
Idli Dosa Batter-3 Cups
Onion/Shallots-1/4 Cup chopped finely
Chili-3 Chopped finely
Curry leaves-1 tbsp Chopped finely
Coriander leaves-1 tbsp Chopped finely
Mustard Seeds,Urad dal-1 tsp
Cumin Seeds-1/2 tsp
Oil-1 tbsp
Carrot-finely chopped(optional)
Step by Step Photo Recipes
1.Heat a Kadai and add Oil.

2.Add Mustard Seeds,Urad dal and Cumin seeds.


3.Allow it to splutter.
4.Now add the chopped onions and Green Chilies.

5.Next goes in Curry leaves and coriander leaves.(you can also add chopped carrots and this stage)

6.Saute for 1min.

7.Transfer the mixture into the batter.

8.Add required Salt.

9.Mix and allow it to sit for 15 mins.
10.Heat a Paniyaram kadai and add Oil.

11.Once the pan is hot add the batter.


12.Cook in medium flame,so that the inner part of paniyaram cooks well.

13.Once it is cooked,turn into other side using a stick.


14.Now slowly cook on other side.

15.Once it turns into golden brown remove it from the pan.
16.Now serve the paniyaram immediately with chutney or sambar.

Notes
1.Make sure to cook in medium flame for good taste.
2.For hotel style paniyaram,you can add 1/4 tsp Baking Soda.

Step by Step Photo Recipes For Egg Paniyaram
1.In the Paniyaram batter add the eggs(you can add 1 or 2).


2.Add Salt and Mix.
3.Heat the Paniyaram pan and add Oil.

4.Pour the batter and cook in low flame.


5.when one side of the paniyaram turns golden brown flip over to the other side using stick.


6.Cook till it turns golden brown.

7.Serve hot.
